Nutrient-Rich Vegetables for Healthy Living
Eastern Macedonia is home to fertile lands producing a variety of nutrient-rich vegetables, some of which are excellent sources of plant-based proteins. Among the most notable are legumes such as fava beans, lentils, and green peas. These legumes are rich in protein, containing 6-9 grams per 100 grams when cooked, and are staples in traditional dishes like fava puree and lentil soup.
Spinach, another widely cultivated vegetable, provides around 2.9 grams of protein per 100 grams. Beyond protein, it offers essential amino acids and micronutrients like iron and magnesium, crucial for energy and metabolism. Broccoli, also popular in Eastern Macedonian farms, contains about 2.8 grams of protein per 100 grams. It is particularly valued for its complete amino acid profile and high fiber content.
