Fakes Soupa (Greek Lentil Soup)

A simple yet delicious traditional recipe for Fakes Soupa (Lentil Soup) made with Eglouvi lentils:

Ingredients:

  • 1 cup Eglouvi lentils, rinsed
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 bay leaf
  • 1/4 cup olive oil
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste
  • Water (about 4 cups)

Instructions:

  1. Sauté the base: In a pot, heat the olive oil over medium heat. Add the onion, garlic, and carrot, and sauté until soft.
  2. Add the lentils: Stir in the tomato paste, bay leaf, oregano, and rinsed lentils. Cook for a minute to coat the lentils.
  3. Simmer: Add water and bring to a boil. Lower the heat and simmer for 30–40 minutes until the lentils are tender. Season with salt and pepper.
  4. Finish: Remove from heat and stir in red wine vinegar for a tangy finish. Adjust seasoning if needed.

Serve hot, drizzled with a bit more olive oil, and enjoy with crusty bread. This hearty, nutritious soup showcases the unique flavor of Eglouvi lentils and is a comforting dish perfect for any season.
