Aegina’s “Fistikia”

The Unique Greek Pistachio

The island of Aegina, located in the Saronic Gulf, is the exclusive origin of Fistiki Aiginis, a specific variety of pistachio nut holding Protected Designation of Origin (PDO) status. While pistachios are cultivated globally, the Aegina pistachio is distinguished by its unique flavor, aroma, and color, attributed to the island’s particular microclimate and soil composition.

Cultivation of pistachios on Aegina began in the late 19th century and quickly became a staple of the island’s agricultural economy. The trees thrive in the island’s dry, Mediterranean climate. Harvesting occurs in late summer, typically August and September, and involves a combination of traditional and modern methods to ensure the nuts are gathered at peak ripeness.

Fistiki Aiginis is characterized by its slightly elongated shape, vibrant green kernel, and a more pronounced, intensely sweet and earthy flavor compared to other pistachio varieties. It is consumed roasted and salted, used extensively in confectionery (such as pasteli, baklava, and ice cream), and incorporated into savory dishes. The PDO status safeguards the quality and origin of this economically and culturally significant Greek agricultural product.
