A Spicy Legacy of Tradition

In the lush Ionian Islands, particularly on Corfu, ginger beer has become a beloved and refreshing beverage with a surprising history. Introduced by the British during their 19th-century occupation, the spicy, effervescent drink quickly captured the hearts of the locals, who adapted the recipe to create their own unique version. Today, ginger beer production remains a vibrant part of the island’s culinary heritage.

The Corfiot version of ginger beer, known as “Tsitsibíra”, differs from its British counterpart by being non-alcoholic and made with simple, natural ingredients. Fresh ginger root is finely grated and combined with sugar, lemon juice, and water, then allowed to ferment naturally, developing a light, refreshing fizz. The fermentation process, although short, gives the drink its signature tangy bite and effervescence, making it the perfect thirst-quencher on a hot Ionian day.

Ginger beer is enjoyed both as a standalone drink and as a versatile ingredient in cocktails, adding a zesty, spicy kick to mixed drinks. Its bright, peppery flavor pairs well with local dishes, enhancing the culinary experience of the Ionian Islands.
