Kozani, a region in northern Greece, is renowned for producing some of the highest quality saffron in the world. This prized spice, derived from the Crocus sativus flower, thrives in the rich soil and favorable climate of Kozani, making it a significant agricultural product for the area. Known locally as “Kozani saffron” or “Krokos Kozanis,” this saffron is celebrated for its vivid color, distinct flavor, and numerous health benefits.
The cultivation process for saffron in Kozani is labor-intensive and requires meticulous attention. Farmers plant saffron bulbs in late summer, and when the flowers bloom in October, they carefully hand-harvest the delicate threads. Due to the labor-intensive harvesting methods, it takes approximately 150,000 flowers to produce just one kilogram of saffron, highlighting its value.
The region hosts the annual Saffron Festival, celebrating the cultural heritage and economic importance of saffron farming. This event attracts visitors from across Greece and beyond, featuring exhibitions, tastings, and traditional crafts.
