Ingredients:
- 500g Greek country sausages, sliced into thick rounds
- 2 large bell peppers (red, green, or yellow), sliced
- 1 largeonion, finelychopped
- 3 garliccloves, minced
- 3 ripe tomatoes, grated or 1 can crushed tomatoes
- 1 tbsptomatopaste
- 1 tspsugar
- 1/2 tspdriedoregano
- 1/2 tsp hot chili flakes (optional)
- 1/4 cupoliveoil
- Salt and peppertotaste
Instructions:
- Brown the sausages: In a large pan, heat olive oil over medium heat and brown the sausage slices. Oncebrowned, remove and setaside.
- Sauté the vegetables: In the same pan, sauté the onion, garlic, and bell peppers until soft.
- Add tomatoes: Stir in the grated tomatoes, tomato paste, sugar, oregano, and chili flakes. Cook for 5 minutestothicken.
- Simmer: Return the sausages to the pan, mix well, and let everything simmer for 15-20 minutes, allowing the flavors to meld together. Seasonwithsalt and pepper.
- Serve: Serve hot, accompanied by crusty bread or over rice.
