Nutritionally, artichokes are a powerhouse of health benefits. They are low in calories yet rich in fiber, promoting digestive health and aiding weight management. Packed with antioxidants, particularly cynarin and silymarin, artichokes support liver function and may help lower cholesterol levels. They are also a good source of vitamins C and K, folate, and minerals like magnesium and potassium, contributing to overall well-being.

A simple and delightful way to enjoy artichokes is by preparing Stuffed Artichokes. To make this dish, steam the artichokes until tender, then remove the center leaves. In a bowl, mix breadcrumbs, garlic, parsley, olive oil, and lemon juice. Stuff this mixture into the artichokes, drizzle with olive oil, and bake until golden.
